Our Philosophy and the idea of the " Osteria "

First of all we are direct importers of wines and food . We taste, select , buy directly from the producers personally and ship it to York . This is what we do in order to preserve the quality control of our ingredients and their diversity in net contrast with the process of globalization which is a characteristic of modern living.
This should be enough !! just to eat what is in the counter , but we go further in our restaurant where daily we use the best available ingredients to prepare dishes for our customers.
We use what is offered by the season and by the daily market , in the kitchen the ingredients make the menu not the chef in advance - this is what we think is the best way to eat good food and is the philosophy of the Osteria ( ancient eateries where no menu was written and the offer was changed daily ) .
